Radish Kimchi or Kkakdugi, is a family favorite type of kimchi. Moderately spicy with a nice crunch, you can add this to anything from rice bowls to burritos. My friends eat it out of the jar.
This recipe comes from my mother who learned from her mother, a professional Korean chef. They grew up in the Jeolla region which is known as a culinary Mecca. Please enjoy our family’s kimchi recipe from our family to yours!
Ingredients: Korean radish, green onions, Korean red pepper, garlic, ginger, organic cane sugar, anchovy sauce, fermented shrimp paste, rice flour, water.
